- Sift the flour into a mixing bowl
An essential step to avoid lumps!
- Combine the dry ingredients
Start beating while adding the salt and sugar
- Add the eggs one at a time
While still beating, add the eggs one at a time, until you get a sticky batter
- Mix the liquids
Mix the milk with the orange blossom extract and the rum
- Add the flavoured milk
Pour the milk very slowly onto the batter while still beating. Gradually raise the mixer speed. Keep beating until the batter is smooth
- Let the batter rest
At least 2 hours, ideally overnight in the fridge
- Cook
Cook in a lightly buttered crêpe pan over medium heat. Flip halfway through
- Enjoy
